4 x 6oz Tyson® Chicken Breast 2 Tomatoes, cored and cut in wedges 1 Lucayan Tropical® Seedless Cucumber, peeled, cored and sliced 2 Avocados, cut in half, deseeded and sliced in a fan 2 cloves of Garlic, crushed and chopped ¼ cup of fresh Basil, julienned ½ cup of Basso® Extra Virgin Olive Oil ¼ cup Balsamic Vinegar Micro Greens for garnish
Season and grill the chicken breasts. Put on the side and tent with foil. In a bowl, whisk together the garlic, olive oil, balsamic vinegar, salt and pepper. Toss the tomato wedges, the sliced cucumbers, basil, season with a little salt and pepper and some of the dressing. On 4 plates, place the avocado fans from the centre to the rim drizzle with a little dressing. Share the tomato and cucumbers. Between the 4 plates: to one side, slice chicken breast and put to opposite side garnish with micro green on top. Serve rest of dressing on the side. Bon Appétite.
