Grilled Chicken CiabattaIngredients

4×6 oz Tyson® Chicken Breast
4 Eurobake® Ciabatta bread
2 Yellow Squash, sliced, seasoned and grilled
2 Lucayan Tropical® Red Peppers, grilled, cut in half and deseeded
Basso® Extra Virgin Olive Oil
Sherry Vinegar

For Salsa

10 pcs Sundried Tomatoes, soaked in hot water drained and chopped
2 bunch of Scallions, sliced
1 Yellow Pepper, diced
1 Lucayan Tropical® Seedless Cucumber peeled and diced
½ cup of Cilantro, chopped
1 Goat Pepper, deseeded and diced
Basso® Extra Virgin Olive Oil
Sherry Vinegar
Badia® Sea Salt

Season and grill chicken breasts. Warm ciabatta and cut in half lengthwise.Drizzle with olive oil and vinegar. Arrange the red pepper on the base of the ciabatta with the grilled yellow squash. Then add then the chicken.

Top with salsa put on top half of the bread. Cut in half at an angle and serve.

For Salsa: Mix ingredients together and let stand for 10 minutes. Taste, adjust seasoning and serve. You Can also mix a little of the salsa with mayonnaise and use it to spread on the bread before you start building the sandwich.
