INGREDIENTS: 4 whole Tilapia, cleaned and scored Pepper Sour with grated Ginger & Garlic mixed in Badia Sea Salt Basso Extra Virgin Olive Oil Whole Harvest Cooking Spray
For the Spinach: 1lb Baby Spinach 3 cloves of garlic, crushed and chopped 1 oz Anchor Butter 2 tsp Basso Olive Oil Badia Sea Salt Badia Black Peppercorns
DIRECTIONS: Rub the Pepper Sour, Garlic and Ginger mixture into the scores and inside the fish. Brush with Olive Oil.
Spray grill with Whole Harvest Cooking Spray. Put the Tilapia on the grill and cook for 10-15 minutes on each side until the meat is opaque. Put a large sauté pan over medium heat. Add Badia Olive Oil and Anchor Butter. When the butter starts to foam, add the garlic and sweat.
Add spinach in handfuls. Season with Badia Sea Salt and freshly ground Badia Peppercorns. Toss to wilt. When spinach is wilted, mound onto 4 plates and place a whole grilled Tilapia on top.
Top with a Papaya Salsa. Bon Appétit!
