IngredientsSeared Salmon with Sauté Leeks and Shiitake Mushrooms
4 x 8oz Salmon Fillets
Season with Badia® Sea Salt and freshly ground Mixed Peppercorns and a squeeze of lemon
Basso® Extra Virgin Olive Oil

For the leeks:
2 bunch of Leeks
8oz Shitake mushrooms
1tsp grated Ginger
Sea Salt and Freshly ground mixed peppercorns
Basso® Extra Virgin Olive Oil
A splash of Balsamic Vinegar

Heat olive oil in a skillet until Hot (Not Smoking) and sear salmon for 2 to 3 minutes on each side.
Julienne and wash leeks. Blanch, cool and drain well.
Clean and slice shitake mushrooms. Heat oil over medium heat in a sauté pan Add mushrooms and toss. Then add leeks, ginger, sea salt and freshly ground mixed peppercorns and the splash of balsamic vinegar. Toss well and mix with wooden spoon and cook for 5 minutes.
Divide between 4 plates. Put seared salmon on top and garnish with lemon and grape tomatoes.
