Muscovy Duck aka Barbary Duck is a large duck with thinner skin and less fat than other ducks such as the more widely known Pekin Duck Harvested at 10-12 weeks of age when the meat is the most tender, Muscovy features a large breast, deep red colour. and a flavourful, meaty taste with a texture more like veal.
Muscovy Duck is the preferred type for traditional Caribbean-style Indian Curry Duck, such as that enjoyed in Trinidad and Guyana.
ABOUT THE BREED
Muscovy Ducks were first encountered by Europeans when Christopher Columbus visited The Bahamas. The natives had domesticated the breed, and birds were brought on the Santa Maria ship from the Americas. French explorers brought the birds to France, and the Groupe Grimaud then brought the breed to the US in the late 1970s. The Muscovies are non-migratory birds with a “quiet quack”, low maintenance, muscular and large in size.
Muscovy Ducks are very different than the Pekin Duck breed, a common type of duck that which is by far the most consumed duck grown in the US. Muscovies do not accumulate as much fat as the Pekins do, with about 30-40% less fat on average than a standard Pekin Duck, a fact that dramatically affects cooking methods and time.

The Muscovy Duck matures at a slower rate than the Pekin and hens (females) are processed at the ideal weight of 10 weeks of age and the drakes (males) at 12 weeks. A Muscovy male will weigh approximately 11 lbs at processing and the hens will be roughly 6.5 lbs. Comparatively, both male and female Pekin Ducks will weigh about 8 lbs when they are processed at between 6 and 8 weeks of age.

Very little weight is gained after that time, and processing after that age makes the plucking of the feathers more difficult. In the last 2 weeks of the growth (8 to 10 for hens and 10 to 12 for drakes) is when the ducks will gain the most breast weight.
