Easy Caramel Recipe
Ingredients:
1 cup butter
2 ¼ cup light brown sugar, packed
14 oz sweetened condensed milk
1 cup light corn syrup
1 tsp vanilla extract
Method:
Melt butter in a large microwave-safe bowl. Make sure that the bowl is large enough so that the caramel will not boil over when heated.
Remove melted butter in bowl from microwave and stir inbrown sugar, condensed milk and corn syrup. Stir well. Return bowl to microwave and cook on high for 14-20 minutesm to about 240° F. Remove every third minute to stir quickly and return to microwave. When the mixutre reaches a smooth caramel consistency, add the vanilla and stir thoroughly. To confirm this, after 14 minutes of cooking, place a drop of caramel in a cup of ice water. Wait a minute and then remove the drop to check the consistency. If it falls apart, it needs to cook longer, whereas if it is hard then it is overcooked. Makes one 9×13 pan of caramel, or 8-10 caramel dipped pears.
Dip the Pears
Select pears with stems still attached. Holding the pear by the stem, dip it into the caramel and turn to coat on all sides. Allow pear to drop excess caramel back into the bowl. Place dipped pears on a sheet of parchment or wax paper and let rest until caramel firms up.
If desired, dip caramel pear in melted chocolate and then dip immediately into chopped nuts, toffee, chocolate shavings, sprinkles or any other toppings. Place on parchment or wax paper and allow chocolate to set.
