BEEF COULOTTE is a flavourful, marbled cut from the sirloin. Best cut into steaks then grilled or broiled, can also be sautéed or stir-fried.

Best known as Picanha steak, very popular in South American cooking. 

OUTSIDE SKIRT BEEF is cut from the plate and has a rich, beefy flavour. Popular in South American cooking, it is best marinated and grilled, then sliced against the grain. Often seen in fajitas and arrachera dishes.

BEEF SIRLOIN FLAP is cut from the sirloin near the belly and is tender, versatile and economical. It has a coarse grain similar to skirt steak, and can be used for fajitas, stir-fry, cut into kebabs or sirloin tips
