Grapefruit, Cucumber, Red Onion and Cilantro Salsa

Ingredients

1 Red Grapefruit, peeled and segmented, cut segments in two or three pieces
1 cucumber peeled, deseeded and chopped
1 medium Red Onion, peeled and chopped
1 bunch of Cilantro, chopped
1 Goat Pepper, chopped or to your taste
Badia® Sea Salt
A glug of Basso® Extra Virgin Olive Oil
A splash of Balsamic Vinegar

Directions

Mix all together in a non-reactive bowl and let stand for 30 minutes to develop flavor.
Serve with Grilled Salmon or Grilled chicken breast or any oily fish.

Beef & Broccoli Stir Fry

Ingredients

16 ozs Tenderloin Tips, cut in strips
1 medium Red Onion, sliced
4 Plum Tomatoes, cut in half squeezed, and cut in strips
2 bunches of Broccoli, sliced on a bias
4 cloves Garlic, crushed and chopped
1 inch Ginger, grated
4 teaspoons Soy Sauce
Badia® Sea Salt and freshly ground Peppercorns
Basso® Olive oil for frying

Snow Pea, Fennel and Orange Salad

Ingredients

1 Fennel bulb, trimmed, keep some of the fronds for garnish
2 88ct Oranges
4oz Snow Peas
Badia® Sea Salt and freshly ground Mixed Peppercorns
A splash of Balsamic Vinegar
And a good glug of Basso® Extra Virgin Olive Oil

Directions

Slice fennel and cut in julienne. Peel and segment the oranges over a bowl to catch the juice and squeeze the remains to get out all the juice. Top and tail the snow peas and cut in half at an angle across the centre. Put the fennel and snow peas in a bowl , season with the sea salt and ground mixed peppercorns. 1 6 ounce piece chunk bacon
3 1/2 tablespoons olive oil
3 pounds lean stew beef, cut into 2-inch cubes
1  onion, sliced
Salt and pepper
2 tablespoons flour
3 cups red wine, young and full bodied
3 cups beef stock
1 tablespoon tomato paste
2 cloves mashed garlic

herb bouquet (4 parsley sprigs, one-half bay leaf, one-quarter teaspoon thyme, tied in cheesecloth)
